I have been wanting to bake cupcakes for quite a few months now and today, finally I got time and went ahead with baking a few moist chocolate cupcakes with buttercream frosting topped with rosemary. This is a very easy, eggless recipe which can be made really fast. Check the recipe out for some cupcake baking therapy!
3/4 cup- oil
1 cup- powdered sugar
1/4 cup- cocoa powder
1 1/2 cup- all purpose flour
1/2 cup- curd
1 tbsp- baking powder
1/2 tsp- baking soda
1/2 cup- milk
In a bowl, mix vegetable oil and powdered sugar, add curd.
In a separate bowl, add all dry ingredients- flour, cocoa, baking soda and baking powder. Mix well
Add dry ingredients to the wet ones and keep adding milk.
Mix well and prepare the baking dish by poring the batter into cup cake molds.
Bake for 20 minutes at 180 degree.
Once the cupcakes are baked, top it with buttercream frosting. Garnish them with berries and rosemary!
