Garlic flavored maze flour & spinach flavored rice flour nachos w cheddar cheese (Live Yum special)



Live Yum delivered cheddar cheese shreds this week, I was so excited to try it, it's shredded so well having a smooth texture. Not to forget, all Live Yum products are plant-based, totally innovative and sustainable! You can check their products out on www.liveyumfoods.com or even at Foodhall.

So, I decided to make two types of nachos - Garlic (with maze flour) and spinach (with rice flour)-


FOR THE NACHOS

  • 1 cup- maze flour/rice flour

  • 4 tbsp- all purpose flour

  • 1 cup - water

  • 2 tsp- baking soda

  • 1 tsp- salt

  • 1 tsp - pepper

  • Oil -to deep fry


NOTE- You will need the same set of ingredients for both maze flour and rice flour nachos.


FOR THE CHEDDAR CHEESE SAUCE-

  • 1 cup- milk

  • 2 tbsp - butter

  • 2 tbsp- all purpose flour

  • 1 cup - Live Yum cheddar cheese shreds

  • 2 tsp - pepper

  • 2 tsp - salt

  • 1 tsp - oregano and chilly flakes

FOR THE FLAVORS-

  • 1 cup - spinach (boiled) - with rice flour

  • 5 tbsp- garlic paste - with maze flour

  1. In a pan, boil water and add baking soda, maze flour/rice flour to it.

  2. Turn off the flame and keep mixing, cover it with a lid and let it rest for 10 minutes.

  3. Take a large plate, put the flour into it, add salt, pepper and all purpose flour to it.

  4. According to the type of flour you are using, add the flavors, boiled spinach for rice flour and garlic paste for maze flour.

  5. Combine everything with your hands and start kneading the dough.

  6. Lay a large sheet of parchment paper and flatten the dough over it with the help of a rolling pin.

  7. Make sure that you make a very thin layer out of the dough, start by pricking the dough with the help of fork and then cutting it into strips followed by small triangles.

  8. Deep fry the nachos in low-medium flame.

FOR THE CHEDDAR CHEESE SAUCE-

  1. In a nonstick pan, melt butter and add all purpose flour.

  2. Mix well and then add milk to it, keep mixing and bring it to boil.

  3. Make sure that the milk is now thickened, add salt, pepper, oregano and chilly flakes.

  4. Turn off the flame and add cheddar cheese shreds, initially it will be a bit lumpy and trust me, in a few minutes, the cheese shreds will melt and you will get a very smooth sauce.

  5. Garnish it with mint leaves/spinach leaves.

Your homemade nachos are ready, serve it hot with some chopped tomatoes or just keep munching. ;)
