I have been literally covered in dough and sugar lately, after constant efforts, day after day trying to bake a perfect-spongy cake to make a Swiss roll. I had decided to give up on Swiss rolls but I wanted to make it happen so bad that another idea just came to my mind, no-bake Swiss rolls! Where nothing can go wrong and the dough rolls up so smooth and well. This recipe is very easy with less ingredients-
200 gm- Oreo biscuits (without cream)
2 tbsp- melted butter
5 tbsp- chocolate syrup
1/4 cup- cocoa powder
2 tbsp- milk
2 cups - whipped cream
1/2 cup- cherries
Grind the biscuits, add butter, milk, chocolate syrup, cocoa powder and mix it well with your hands.
Keep kneading it so that it becomes a dough.
If the dough is still lose, you can keep adding milk to bind it.
Lay a large sheet of parchment paper, grease it well with butter/oil.
With a rolling pin, keep rolling the dough so that it becomes a rectangle.
Chop a few cherries and make a cherry compote or a basic cherry syrup by boiling the cherry pieces in water with honey.
On the rectangular dough, spread whipped cream and cherry syrup together, do not mix too much, just even it out with the help of a spatula.
Carefully roll the dough and gently wrap it in another sheet of parchment paper, refrigerate it for 8 hours / overnight so that it sets completely.
Spread whipped cream over the roll, top it with a few cherries and sprinkle some cocoa powder.
Easy no-bake Swiss roll is ready, have it as a party dessert or just an evening snack, The prep time is so less that you would want to make it right away!
