Orange pound cake with coffee frosting (Rage coffee special)


Rage coffee has come up with new exciting flavors and I made orange pound cake with coffee frosting using one of the flavors- Sparky Orange. This pound cake is really light and citrus with a hint of coffee essence.

  • 100 gm- butter

  • 100 gm- sugar

  • 1 cup- flour

  • 1tsp- baking soda

  • 1 tsp- baking powder

  • 1/2 tsp- salt

  • 2- eggs

  • 1 tsp- vanilla extract

  • 2 tbsp- orange juice

  • 1 tsp- orange zest

  • 1 tsp- cinnamon powder

FOR THE COFFEE FROSTING

  • 40 gm- butter

  • 100 gm- icing sugar

  • 2 tsp- coffee powder (Rage Sparky Orange)

  • 2 tsp- warm milk

  • 1 tsp- vanilla extract

  1. In a large bowl, beat butter and sugar with a hand mixer. Incorporate eggs, one by one to this mix.

  2. Add vanilla extract and keep mixing.

  3. In another bowl, sift all dry ingredients- flour, baking soda, baking powder, cinnamon powder and salt.

  4. Add this to the wet mixture, fold gently. Add orange juice and zest, keep folding it gently.

  5. Preheat the oven at 180 degree C and bake it for 30 minutes.

PREPARING THE FROSTING-

  1. Beat butter and icing sugar together with a hand mixer.

  2. Add coffee powder to the milk and keep aside.

  3. Add vanilla extract to the butter-sugar mix, keep beating it till it gets fluffy.

  4. In the end, add the coffee to this frosting, beat it for another 2 minutes.

Let the cake cool to room temperature before you start layering the frosting. Sprinkle some coffee powder on the frosting and garnish the cake with orange peel or thin slices!
