With plenty of plums this season, I decided to make a basic sponge cake but topped with plums. So, if you have some overripe plums, you are in for a treat!
1 1/4 cup- all purpose flour
2/3 cup- castor sugar
1/3 cup- oil
1 tbsp- baking powder
1 tsp- baking soda
1 tsp- vanilla extract
1/3 cup- milk
In a large bowl, beat eggs, sugar and add vanilla extract then add oil and keep mixing.
In a separate bowl, sift all the dry ingredients- flour, baking soda and baking powder.
Add the dry ingredients to the wet ones and alternately keep adding milk and folding the mic with a spatula.
Pour this batter into a baking dish, make sure you grease it with some oil or lay a parchment paper.
Bake it for 40 minutes at 165 degree C.
