When life gives you lemons, don't squeeze them,
Go, bake some lemon bars!
There are days when you feel like there is overdose of sugar yet you wanna bake some sweet dough. Well, don't worry because the sweet just isn't as sweet without the sour, here comes lime to your rescue.
1.5 cups sugar
1/2 cup all purpose flour
5 tbsp melted butter
2-3 tbsp milkmade (optional)
FOR THE CRUST-
Take 10-15 biscuits, break them and add them to the food processor and make biscuit crumbs out of it.
Add butter and milkmaid, keep mixing
Your crust is ready, lay the crumbs onto a rectangular tin, form a layer and keep compressing it using your hands for about one minute.
Bake it for 7 minutes at 350 degree F
FOR THE BATTER -
Grind sugar and lemon zest of 2 lemons together in a food processor.
Take a bowl, add the lemon-sugar mixture, eggs, lemon juice of 3 lemons and flour.
Keep whisking it.
Once your crust is baked, add the batter over the baking tray. The batter is gonna be liquid in consistency.
Bake it for 25 minutes at 350 degree F.
Once it's baked, refrigerate it for 2-3 hours.
Cut it into small bars, you can top the bars with whipped cream along with lemon slices or just sprinkle some powdered sugar.
