I was tired of eating dairy and wanted to bake something non-dairy. Sometimes, it could get really heavy to eat too much dairy in the summer, gotta make use of some citrus fruits in the sun! Oranges can never go wrong, no mater how you take it, that is why I decided to bake with oranges which was so refreshing, soothing and light!

You can make the same recipe using lime, pineapple or even peach! Use as many fruits as you can, this summer.
1 cup - all purpose flour
1.5 cup - unsalted butter
110 gm- sugar
1 tsp - baking powder
Vanilla essence .
Preheat the oven at 180 degree C.
FOR THE CARAMEL
7 tbsp - sugar
4 tbsp - orange juice
1-2 tbsp orange juice
1 tsp - lemon zest
Place a pan on low heat, add sugar and orange juice, don't stir.
Allow it to caramelize on low flame for 1 minute.
Glaze your baking dish with either butter or oil and pour the caramel onto the baking dish.
Arrange the orange slices over the caramel as soon as you pour it.
FOR THE BATTER
Make sure your butter is in room temperature, beat butter and sugar together in one direction. You can either use a blender or do it manually with a whisk.
Add eggs, one by one while whisking the butter-sugar mix.
In a separate bowl, mix flour, cinnamon, baking powder and salt.
Mix the dry ingredients with the wet ones and add orange juice with lemon zest to it.
Lightly wrap both the mixtures together with a spatula, do not use a whisk or a blender.
Bake it for 30-35 minutes at 180 degree C.
Once the cake is baked, allow it to cook for at least 40 minutes and flip it.
Your upside down orange cake it ready, you can even layer the cake with orange marmalade to make it extra citrus or just have it with some orange juice, enjoy.
